One of the first people we met when we moved to Cambria was Chef Ian Mc Phee. His restaurant, IAN’S, was one of our favorites. It has since closed and Ian now owns and operates McPhee’s Grill in
Templeton. Anyway, he served this
sauce and I thought it was about the best thing I had ever tasted. I tried to copy it but could not quite get it right. And Ian wouldn’t give it to me. One
day I was talking food with my gardener and I was whining about not being able
to get Ian’s peanut sauce recipe. She
said: “Oh, I have that and I’ll be happy to give it to you.” I have no
idea how she got this recipe but here it is in all its glory. And, it’s still the best spicy peanut sauce I’ve ever tasted.
Spicy Peanut
Sauce
INGREDIENTS
½ cup salad oil
2 tsp water
1 tsp fresh grated ginger
4 cloves garlic, chopped
¼ cup rice wine vinegar
½ cup fresh lemon juice
½ cup soy sauce
½ cup peanut butter
½ tsp red pepper flakes
½ cup fresh cilantro
METHOD
Put all ingredients in a blender and mix well.
Adjust amount of red pepper flakes for degree of heat you want. I
like to make the sauce several hours ahead and let it sit to let
the flavors mix. Can be used warm or cold
