Our friend, Penny, makes these cookies to rave reviews. When we tell people they are made with Potato Buds, they can’t believe it. They reach for another cookie, taste it and still can’t believe it. And, they are wonderful!!!!
POTATO BUD COOKIES
INGREDIENTS
1 cup softened butter
2 cups granulated sugar
2 eggs
2 tsp Coconut extract
2 2/3 cup Bisquick
2 2/3 cup Betty Crocker Potato Buds
METHOD
Cream softened butter and sugar together. Mix in eggs and coconut extract and beat well. Add the Bisquick and Potato Buds. Mix well. (the mixture will be grainy) Bake at 350 degrees for 13-15 minutes. Let cool no longer than 2 minutes (the cookies will be soft and pliable) and remove from sheet. Let cool on rack. These cookies will be somewhat flat. And, least we sound like a commercial for Betty Crocker, no other kind of instant mashed potato seem to work very well.
