Last
month’s recipe was a Spicy Peanut Sauce and you need that recipe to make this
one. This salad is best if it sits at
least several hours before serving or it can be made the day before.
Cold Pasta Salad
in Spicy Peanut
Sauce
INGREDIENTS
1/2 lb spaghetti
1 cup Spicy Peanut Sauce
3-4 green onions, chopped
½ cucumber chopped
½ cup dry roasted peanuts
¼ cup cilantro, chopped
1 can sliced water chestnuts
½ cup fresh cilantro
METHOD
Cook
spaghetti, drain and rinse well under cold water. Shake all water off spaghetti.
Add all other ingredients except peanuts in a mixing bowl and toss
well. Refrigerate at least 2
hours. Before serving, toss again and
add extra peanut sauce if you want the salad to be more moist. The pasta tends to absorb liquid.
Place in serving bowl and top with the
peanuts. You could add some cooked
chicken to the salad and turn it into a main course. Enjoy!!
