You loved our spicy Mexican sauce. Here is a recipe that uses that sauce and is so good and so easy and the same time. My kind of recipe!! You could use beef instead of chicken but use a fairly good cut as the cooking time is not long enough to tenderize a less expensive cut. Top sirloin would be a good choice.

DIABLO CHICKEN

INGREDIENTS

4 boneless chicken breasts or 2 lbs beef
3 tomatoes
1 yellow onion
2 tbs oil
2 - 4oz cans whole mild chilies
salt and pepper
salsa Diablo

METHOD

Cut chicken or beef into approximately 1 inch cubes or strips. Coarsely chop the onion and tomato. Cut chilies into thin strips. You need a pan that can start on the stove and end in the oven. Preferably one that has a lid. Heat the pan to med high heat, add oil, onion and meat. Salt and pepper meat and brown on all sides. When browned, remove from heat, add 2 tbs salsa diablo and stir into meat until well coated. Two tbs salsa will give you a slightly spicy dish. Add more for more heat. Spread tomatoes on top of meat and chilies on top of the tomatoes. Cover and bake for 30 min in a pre-heated 350 degree oven. Serve with rice or pasta. Serves 4
